BASE
1 1/2 cups almond flour
2 tablespoons pure maple syrup
3 tablespoons coconut oil, melted.
CARAMEL LAYER
5 medjool dates, soaked in 1/2 cup boiling water for 5mins, keep the water.
reserved water, from the dates
1/3 cup nut better of your choice,
TOP LAYER
1 block of 80% chocolate, broken into pieces
1 teaspoon coconut oil
small handful of cashew nuts, chopped.

Directions
- Line a loaf tin with baking paper and set aside.
- Place all the base ingredients in a food processor and blitz. until fully combined. Press the mixture into the prepared loaf tin with your fingers evenly.
- Place the tin into the freezer while you do the next step.
- In the food processor add dates, reserved 1/2 cup water and nut butter and blitz until combined. spread the caramel onto the base layer evenly. Place back in the freezer.
- Place the chocolate and coconut oil into a microwave safe dish and melt at 30 second intervals, stirring in-between until fully melted. Pour the chocolate over the caramel and then sprinkle with some salt and cashew. Place back into the freezer until the chocolate is fully melted.
- Once completely set, slice and enjoy. Keep in the freezer.
