  • 1/2 red capsicum, deseeded and chopped.
  • 1/2 green capsicum, deseeded and chopped.
  • 1/2 red onion, chopped.
  • 1/2 cup coriander, leaves only, chopped.
  • Corn taco shells, cabbage leaves, lettuce leaves or wraps to serve.

  • 1 tablespoon tamari or soy sauce

Ingredients

  • Juice of 1/2 lime

  • 1 tablespoon olive oil

  • salt and pepper to taste

  • 150g cherry tomatoes, chopped

  • 1/2 red capsicum deseeded and chopped

  • 1/2 green capsicum deseeded and chopped

  • 1/2 red onion, chopped

  • 1/2 cup coriander, leaves only, chopped

  • Corn taco shells, cabbage leaves, lettuce leaves or wraps to serve

  • WALNUT TACO MIX

  • 1 cup walnuts

  • 1 tablespoon tamari or soy sauce

  • 1/4 teaspoon chipotle chilli powder

  • 1/4 teaspoon smoked paprika powder

  • 1 1/2 teaspoons olive oil

Directions

  • Walnut taco mix – Place all the ingredients for the taco mix into a food processor and pulse just to mix. it should resemble beef mince.
  • To make the dressing whisk lime juice, olive oil and salt and pepper in a bowl.
  • Place the chopped veggies in a bowl with the dressing, fold in the coriander and chill in the fridge for 5-7 minutes.
  • To serve spoon some walnut mixture and the veggies into your choice of shell or wrap.
