150g cherry tomatoes, chopped
1/2 red capsicum deseeded and chopped
1/2 green capsicum deseeded and chopped

WALNUT TACO MIX
1 cup walnuts
1 tablespoon tamari or soy sauce
1/4 teaspoon chipotle chilli powder
1/4 teaspoon smoked paprika powder
1 1/2 teaspoons olive oil
Directions
- Walnut taco mix – Place all the ingredients for the taco mix into a food processor and pulse just to mix. it should resemble beef mince.
- To make the dressing whisk lime juice, olive oil and salt and pepper in a bowl.
- Place the chopped veggies in a bowl with the dressing, fold in the coriander and chill in the fridge for 5-7 minutes.
- To serve spoon some walnut mixture and the veggies into your choice of shell or wrap.
