BASE
1 1/2 cups almond meal
4 tablespoons cocoa powder
1/2 cup almond or cashew butter
TOPPING
200g dark chocolate
1 tablespoon coconut oil
1 tablespoon almond butter
1 tablespoon honey
1/4 teaspoon Himalayan pink salt
1 1/2 cups organic puffed rice
Directions
- Line a rectangle pan with baking paper and set aside.
- In a high-speed food processor add all the base ingredients and pulse until well combined.
- Press the base mixture into the lined pan, creating an even layer.
- place the base in the fridge to firm.
- Place the chocolate and coconut oil in a heat proof dish and microwave on high for 30 seconds at a time, stirring each time until fully melted.
- Stir into the chocolate – nut butter, honey and salt.
- Pour in the rice puffs to the chocolate and mix well until there completely coated in the chocolate.
- Pour the mixture into prepared base and spread evenly over the top. Refrigerate for a further 30 minutes to 1 hour until the chocolate is completely set.
- Once set lift out from the pan and slice. Enjoy
