Ingredients

  • 500g boneless chicken breasts

  • 1 red bell pepper, thinly sliced

  • 1 green bell pepper, thinly sliced

  • 1 onion, thinly sliced, can use red or brown onion

  • 2 tablespoons olive oil

  • 1 teaspoon chili powder

  • 1 tablespoon cumin

  • 2 teaspoons paprika

  • 1 teaspoon onion powder

  • 1 teaspoon garlic powder

  • 1 teaspoon dried oregano

  • Salt and pepper to taste

  • Juice of 1 lime

  • Fresh cilantro, chopped (optional)

  • Flour or corn tortillas, for serving

  • Optional toppings: sour cream, guacamole, shredded cheese, salsa

Directions

  • Preheat the oven to 400°F (200°C).
  • In a large bowl, combine the sliced chicken, bell peppers, and onion.
  • Drizzle with olive oil and sprinkle with chili powder, cumin, paprika, garlic powder, onion powder, oregano, salt, and pepper. Toss until the chicken and vegetables are evenly coated with the oil and spices.
  • Arrange the chicken and vegetable mixture in a single layer on a large baking sheet.
  • Bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through and the vegetables are tender.
