Ingredients

  • 3 medium to large, sweet potatoes

  • 3 teaspoons honey

  • 3 tablespoons olive oil

  • 2 lemons or limes

  • pinch of chili flakes

  • black pepper

  • 3 heaped tablespoons of Greek yogurt

  • salt

  • approx. 4 spring onions

  • bunch cilantro

  • 1 green chili (optional)

Directions

  • Pre heat oven to 180 degrees or 350F
  • Wash sweet potatoes and cut them into 8ths
  • In a cup mix together honey and olive oil. Pour over sweet potatoes in a baking dish.
  • Zest lemons or limes over the top and add a pinch of chili flakes and a good whack of cracked pepper.
  • Give it a good mix around with your hands.
  • Put in the oven for 1-1.5 hours, they should have caramelization to them.
  • Meanwhile in a bowl mix together yogurt, juice from one lemon/lime and a pinch of salt.
  • Finely chop the cilantro, and finely chop green chili if using.
  • Place sweet potatoes on a serving dish or salad bowl and sprinkle with some salt, drizzle over the yogurt, sprinkle with spring onions, cilantro and chili. Finish with a squeeze of lemon or lime juice. Enjoy!
