Sweet Potato Salad

3 medium to large, sweet potatoes
3 teaspoons honey
3 tablespoons olive oil
2 lemons or limes
pinch of chili flakes
black pepper
3 heaped tablespoons of Greek yogurt
salt
approx. 4 spring onions
bunch cilantro
1 green chili (optional)
Directions
- Pre heat oven to 180 degrees or 350F
- Wash sweet potatoes and cut them into 8ths
- In a cup mix together honey and olive oil. Pour over sweet potatoes in a baking dish.
- Zest lemons or limes over the top and add a pinch of chili flakes and a good whack of cracked pepper.
- Give it a good mix around with your hands.
- Put in the oven for 1-1.5 hours, they should have caramelization to them.
- Meanwhile in a bowl mix together yogurt, juice from one lemon/lime and a pinch of salt.
- Finely chop the cilantro, and finely chop green chili if using.
- Place sweet potatoes on a serving dish or salad bowl and sprinkle with some salt, drizzle over the yogurt, sprinkle with spring onions, cilantro and chili. Finish with a squeeze of lemon or lime juice. Enjoy!
