Greek Salad

2 cups Spinach leaves
1 small cucumber, chopped
1 punnet of cherry tomatoes
1/2 red onion, diced
1/2 cup Kalamata olives, sliced in half
150g feta cheese, cut into squares or crumbled
1 tablespoon of each – pumpkin seeds and sesame seeds
2 tablespoons pine nuts
DRESSING
1/4 cup olive oil
1 tablespoon lemon juice
1 tablespoon balsamic vinegar
1 garlic clove, crushed
1 teaspoon dried oregano
salt & pepper to taste
Directions
- Start by cutting your cucumber, tomatoes, red onion, olives and feta.
- In a large bowl combine your spinach leaves, cucumber, tomatoes, red onion, olives, feta, seeds and nuts. Toss together to mix.
- In a small bowl mix all your dressing ingredients together and mix until well combined. Drizzle over the salad and toss to coat.
- Serve immediately for a fresh, crunchy, and tangy Greek salad.
