Ingredients

  • 1/2 cup almonds

  • 1 cup cashew nuts

  • 1 cup pecans

  • 1 cup walnuts

  • 1 cup Brazil buts

  • 1 tablespoon cinnamon

  • 1 teaspoon ginger

  • 1/2 teaspoon salt

  • 2 tablespoons olive oil

  • 2 tablespoons pure maple syrup

  • 1 teaspoon vanilla extract

Directions

  • Preheat the oven to 160ยฐC (320ยฐF). Line a baking tray with baking paper.
  • Place all the nuts into a bowl along with the spice, mix to combine.
  • In a separate bowl mix together the olive oil, maple syrup and vanilla extract. Pour over the nuts and spices mix and mix together well so all the nuts are coated.
  • Pour the nuts onto your prepared tray and spread them out. Bake for 20 mins, stirring halfway through cooking.
  • Let the nuts cool completely before putting them into a sterilized sealed jar.
