Choc Top Protein Bars

150g nuts of your choice, we used cashews and almonds.
2 scoops vanilla protein powder
1 tablespoon almond butter
1 tablespoon Macca powder
1 tablespoon flaxseeds
3 1/2 tablespoons coconut oil
3 medjool dates, seeds removed.
1 block (100g) 90% chocolate of your choice.

Directions
- In a food processor, combine the nuts, vanilla protein powder, almond butter, maca powder, flaxseeds, coconut oil, and medjool dates.
Process the mixture until it forms a sticky dough-like consistency. - Line a loaf tin with parchment paper, leaving some overhang on the sides for easy removal later.
Transfer the nut mixture into the lined tin and press it down firmly and evenly using the back of a spoon or your hands. - Place the tin in the freezer and chill to allow the mixture to firm up.
- While the nut base is chilling, melt the 90% chocolate in a heatproof bowl over a pot of simmering water or in the microwave, stirring occasionally until smooth.
- Once the nut base is firm, pour the melted chocolate over the top, spreading it evenly with a spatula. Sprinkle some salt over the melted chocolate.
Return the tin to the freezer and chill for another 30 minutes to set the chocolate topping. - Once set, lift the protein bar slab out of the tin using the parchment paper overhang.
Place it on a cutting board and cut it into bar-like shapes using a sharp knife. - Serve the Choc Top Protein Bars immediately or store them in an airtight container in the refrigerator for up to two weeks.
