Ingredients

  • 200g Feta cheese

  • 3-4 tablespoons olive oil

  • 2 tablespoons lemon juice

  • FOR THE GREEN BEANS

  • 300g green beans, trimmed

  • 2 tablespoons olive oil

  • 2 garlic cloves, minced

  • Zest of 1 lemon

  • 80g Pistachio nuts, roughly chopped. save some for garnish

  • salt and pepper to taste

  • dried chilli flakes, optional

Directions

  • Combine feta, olive oil and lemon juice in a food processor. Blend until smooth and creamy, adding more olive oil if needed for the desired consistency. Spread onto a serving plate or bowl.
  • Bring a pot of salted water to a boil. Add the green beans and parboil for 2–3 minutes until bright green but still firm.
  • Drain the beans. Heat olive oil in a large skillet over medium heat. Add garlic and sauté for 1 minute until fragrant.
  • Add the green beans and lemon zest, season with salt and pepper, and fry for 2–3 minutes.
    Toss in the pistachio nuts and cook for 1-2 minute to toast slightly.
  • Arrange the fried green beans over the whipped feta.
    Drizzle with olive oil and add chilli flakes if using and serve immediately.
