Green Buckwheat Crepes

1 cup buckwheat flour
1 cup of coconut milk or milk of choice
1 big handful, 1/2 bag spinach leaves.
2 eggs
salt and pepper to taste.
1/2 teaspoon of turmeric
coconut oil, for cooking.
Directions
- Add all ingredients into a blender/food processor except the coconut oil and blend until you have a smooth consistency.
- Heat 1 teaspoon of coconut oil in a frying pan over medium heat.
- Pour some mixture into the middle of the pan and pick up the pan and spread the mixture around so it coats the bottom of the pan.
- Cook the first side until bubbles form or until you can move the crepe easily.
- Flip the crepe and cook for a further minute or so.
- Fill with whatever fillings you like.
