  • 2 tablespoons maple syrup

  • 1 teaspoon vanilla extract

  • Place the chopped dark chocolate in a heatproof bowl. Set the bowl over a pot of simmering water, ensuring the bottom of the bowl does not touch the water. Stir occasionally until the chocolate is completely melted and smooth. Remove from heat and let it cool slightly.
  • Drain a can of organic chickpeas and reserve the liquid (Aquafaba). Using an electric mixer or whisk, beat the Aquafaba on high speed until it forms stiff peaks, similar to whipped cream. This may take about 5-10 minutes.
