  • 1/4 cup slivered almonds

  • DRESSING

  • 1/3 cup olive oil

  • 1 tsp Dijon mustard

  • 2 tablespoons honey

  • juice from 1/2 lemon.

  • 1/2 tsp onion powder

  • salt and pepper to taste.

Directions

  • Wash the kale and rocket thoroughly, then dry them using a salad spinner or pat them dry with paper towels. Remove the tough stems from the kale leaves and chop the leaves into bite-sized pieces. Place the chopped kale in a large mixing bowl.
