Ingredients

  • 3 large eggs

  • 1/2 cup mushrooms (any variety you prefer)

  • 1/4 cup chopped red onion

  • 1/4 cup shredded cheese, such as cheddar, mozzarella or Swiss.

  • 1 tablespoon feta cheese, crumbled

  • 1 tablespoon butter or olive oil

  • salt and pepper to taste

  • fresh herbs, chopped. optional for garnish

Directions

  • Crack the eggs into a bowl and beat them lightly with a fork or whisk until the yolks and whites are combined.
  • Clean the mushrooms thoroughly and slice them into thin slices.
    Chop the onion into small pieces.
    Shred the cheese if it’s not already shredded.
