Mushroom Omelette

3 large eggs
1/2 cup mushrooms (any variety you prefer)
1/4 cup chopped red onion
1/4 cup shredded cheese, such as cheddar, mozzarella or Swiss.
1 tablespoon feta cheese, crumbled
1 tablespoon butter or olive oil
salt and pepper to taste
fresh herbs, chopped. optional for garnish

- Crack the eggs into a bowl and beat them lightly with a fork or whisk until the yolks and whites are combined.
- Clean the mushrooms thoroughly and slice them into thin slices.
Chop the onion into small pieces.
Shred the cheese if it’s not already shredded. - Heat a non-stick skillet over medium heat and add the butter or olive oil.
Once the butter is melted or the oil is heated, add the sliced mushrooms and onion to the skillet.
