  • 4 cups watermelon, cubed

  • 200g haloumi, sliced

  • 1 small red onion, thinly sliced

  • handful of fresh mint

  • handful of fresh basil leaves

  • DRESSING

  • 3 tablespoons olive oil

  • 2 tablespoon fresh lemon juice

  • 1 teaspoon honey, optional

  • pinch of salt and pepper

Directions

  • Heat a non-stick skillet over medium heat. Add the haloumi slices and fry for 2โ€“3 minutes on each side until golden brown and crispy. Set aside to cool slightly.
  • In a large serving bowl or platter, layer the watermelon cubes, red onion slices, fried halloumi, mint leaves, and basil leaves.
