- 1 medium/large, sweet potato, cooked until soft and cut in half
- ½–1 cup grated cheese (cheddar, tasty or mozzarella)
- 4 slices bacon, cooked until crispy
- 1 avocado, sliced
- A handful of rocket
- 4 poached eggs
- Chilli honey, to drizzle
- Olive oil or butter, for frying
- Salt & pepper
- Baking paper
How to Make Crispy Sweet Potato Smash
1. Pre-cook your sweet potatoes
Boil, steam or microwave the sweet potato until they’re completely soft. Let them cool slightly so they’re easier to handle.
2. Smash them flat
Place one half of the sweet potato between two sheets of baking paper and gently press down with your hand or a flat object to create a thick disc. Don’t worry if the edges crack — that’s what makes them crispy.
3. Melt the cheese in the pan
Heat a non-stick pan over medium heat. Sprinkle grated cheese straight into the pan in a circle roughly the size of your sweet potato disc. Let it melt until it bubbles and starts turning golden.
4. Add the sweet potato & crisp it up

Crispy Sweet Potato Smash with Eggs, Avo & Chilli Honey

handful of rocket leaves
4 poached eggs or eggs to liking
chilli flakes
2 tablespoons honey
salt & pepper

Directions
- Boil, steam, or microwave your sweet potato until soft.
Let them cool slightly. - Lay down a sheet of baking paper, place one half of the sweet potato on it, then cover with another sheet of baking paper. Use your hand or a flat object to gently smash each sweet potato into a thick disc.
Set aside. - Heat a non-stick frying pan over medium heat with a little oil or butter.
Sprinkle a small pile of grated cheese directly into the pan — about the size of your smashed sweet potato.
Let it melt and bubble for 20–30 seconds. - Place the smashed sweet potato disc on top of the melted cheese.
Cook for 3–4 minutes or until the cheese turns golden and crispy underneath.
Carefully flip and cook the other side for 2–3 minutes.
Repeat with remaining sweet potato discs. - Meanwhile cook your chilli honey – Place honey and chilli flakes (as much as you would like) into a small dish and microwave for 10-15secs. it should be nice and runny. If not repeat for another 10 seconds.
- Top each crispy cheesy sweet potato with:
A handful of rocket
Sliced avocado
Crispy bacon
poached eggs
